Corn Muffins Made with Yogurt

Ingredients:

1/2 cup honey
1/3 cup butter, melted
3/4 cup plain yogurt
2 eggs
3/4 cup all-purpose flour
3/4 cup whole wheat flour
3/4 cup cornmeal
½ tsp vanilla extract
2-1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda

Directions:
  1. Preheat oven to 350°F.
  2. Beat together yogurt, butter, honey, eggs and vanilla in small bowl. In a separate bowl; combine flours, cornmeal, baking powder, salt and baking soda.
  3. Add honey mixture to dry ingredients. Fold enough to barely moisten dry ingredients. Do not over mix.
  4. Spoon into  greased muffin cups. Bake for 20 minutes. Remove from pan; cool slightly on racks. Serve warm.
