Ingredients:
1/2 cup
honey
1/3 cup butter, melted
3/4 cup plain yogurt
2 eggs
3/4 cup all-purpose flour
3/4 cup whole wheat flour
3/4 cup cornmeal
½ tsp
vanilla extract
2-1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
Directions:
- Preheat oven to 350°F.
- Beat together yogurt, butter, honey, eggs and vanilla in small bowl. In a separate bowl; combine flours, cornmeal, baking powder, salt and baking soda.
- Add honey mixture to dry ingredients. Fold enough to barely moisten dry ingredients. Do not over mix.
- Spoon into greased muffin cups. Bake for 20 minutes. Remove from pan; cool slightly on racks. Serve warm.
