Honey Cream Banana Fritters

Ingredients:

2 teaspoons Demerara sugar
1 cup crushed corn flakes
1/3 cup olive oil
4 medium peeled ripe bananas
1/2 cup heavy cream
2 eggs

Directions:

  1. Peel bananas cut long ways and in half. Set aside.
  2. In pie dish whisk cream, egg and sugar.
  3. In a separate pie plate add crumbs.
  4. Dredge bananas in cream mixture, then in crumbs.
  5. In a cast iron skillet over medium heat; heat olive oil.
  6. Fry fritters about 2 minutes in each side until crispy and golden brown. Serve with Honey Cream.


Honey Cream

Ingredients:
1/2 cup Raw honey
1 cup commercial sour cream
1 cup Greek yogurt
1/2 teaspoon vanilla extract

Directions:

  1. In a re-sealable bowl stir all ingredients.
  2. Refrigerate until serving with banana fritters. Serve again with pancakes, waffles or French toast.
