Ingredients:
2-3 T dried 4 oz fresh mint leaves
3/4 C boiling water
1/2 C (bottle or pouch) pectin
2 1/2 C
raw honey (
raw wildflower honey or
raw buckwheat honey)
Directions:
Cover mint with boiling water. Let set 15 minutes. Press through sieve. Add
honey.
Heat until boiling; Add pectin, stirring constantly. Bring to a full rolling boil. Remove from stove at once and skim any foam.
Pour into glasses or canning jars and seal.
