Honey Pecan Brittle

Ingredients:

1 C raw honey
2 C sugar
1 C water
1/4 t kosher salt
1 T butter
2 C chopped pecans

Directions:

  1. In a saucepan, mix honey, sugar, salt and water. Wisk until sugar has dissolved and bring mixture to a boil, continue to cook until mixture reaches hard- crack stage or 300°F on a candy thermometer.
  2. Remove from heat and add butter and pecans, gently stir until just mixed.
  3. Pour mixture out onto a well greased cookie sheet (with sides). Spread until mixture is very thin.
  4. Once mixture is cold, break it into irregular shaped pieces by placing a piece of waxed paper over the candy and hitting it with a mallet or hammer. Store in an air tight container.
