Maple Bacon Scallop Skewers

Ingredients:

20 medium scallops
10 slices of thick cut bacon
½ C maple syrup
Salt and pepper to taste

Directions:
  1. Soak 4 wooden skewers in water for one hour
  2. Preheat oven to 425°F
  3. Cut each slice of bacon in half
  4. Wrap each scallop in on ½ piece of bacon and slide on skewers
  5. Lightly season with salt and pepper and drizzle with ¼ C maple syrup
  6. Bake on a cookie sheet until bacon is cooked and scallops are opaque white
  7. Remove from oven, brush with remaining syrup and serve
