Maple Butter Acorn Squash

Ingredients:

1 whole acorn-type squash (also try Carnival or Delicata)
2 T butter
2 T maple syrup
1 T brown sugar
Dash of salt

Directions:

  1. Preheat oven to 375°F
  2. Cut squash in half lengthwise. Scoop out seeds and strings
  3. Rub butter over the inside of the squash, place remaining butter in the seed well. Top with syrup, sugar and salt, divided evenly.
  4. Place in baking pan. Add enough water to the pan until it is between ¼ and ½ in deep
  5. Bake until soft, about 1 hour but overall cooking time will depend on the size of the squash.
