Maple Cranberry Apple Crisp

Ingredients:

1 C rolled oats
½ C pecans, toasted and chopped
½ C brown sugar
1/3 C flour
1 t cinnamon
¼ t salt
½ C butter, chilled and cut into small bits

2 lb tart apples, peeled, cored and thinly sliced
2 C cranberries
½ C maple syrup
1 T flour
1 t lemon zest

Directions:

  1. Preheat oven to 375°F. Grease 11x8 baking dish
  2. Combine oats, pecans, sugar, flour, cinnamon and salt. Rub butter into mixture until semi-uniformly clumpy
  3. Stir together apples, cranberries, syrup, flour and lemon zest. Move to baking dish.
  4. Bake apples for 20 minutes
  5. Add topping by crumbling over hot fruit, leave some large pieces
  6. Return to oven and bake about 35 minutes or until apples are tender and topping is golden
  7. Let stand before serving for at least 10 minutes

Serve warm  with ice cream
