Ingredients:
1 C rolled oats
½ C pecans, toasted and chopped
½ C brown sugar
1/3 C flour
1 t cinnamon
¼ t salt
½ C butter, chilled and cut into small bits
2 lb tart apples, peeled, cored and thinly sliced
2 C cranberries
½ C maple syrup
1 T flour
1 t lemon zest
Directions:
- Preheat oven to 375°F. Grease 11x8 baking dish
- Combine oats, pecans, sugar, flour, cinnamon and salt. Rub butter into mixture until semi-uniformly clumpy
- Stir together apples, cranberries, syrup, flour and lemon zest. Move to baking dish.
- Bake apples for 20 minutes
- Add topping by crumbling over hot fruit, leave some large pieces
- Return to oven and bake about 35 minutes or until apples are tender and topping is golden
- Let stand before serving for at least 10 minutes
Serve warm with ice cream
