Maple Pecan Sweet Potato Casserole

Ingredients:

4 large sweet potatoes
1 C milk
½ C butter, softened
2 T vanilla extract
1/3 C honey
½ C Maple Syrup, plus 2 T reserved
2 eggs
1 C pecans, chopped plus ¼ C reserved

Directions:

  1. Roast sweet potatoes on a cookie sheet at 375°f until soft, about 45 minutes - 1 hour
  2. Remove potatoes form oven, set aside to cool slightly before peeling
  3. Set oven to 350°F. Grease a 2- quart casserole dish
  4. Mash peeled potatoes, milk, butter, vanilla, honey, ½ C maple syrup and eggs together. Fold in pecans. Spoon potatoes into casserole dish and smooth with back of a wooden spoon.
  5. Sprinkle with reserved syrup and pecans
  6. Bake until hot throughout, about 30 minutes
