Ingredients:
¾ C maple syrup
2 ¼ C cream
1 egg
4 egg yolks
4-inches of scraped vanilla bean or 1 tsp ground vanilla
1 t nutmeg
¼ t salt
1 baked 9 inch pie crust
Directions:
- Preheat oven to 350°
- Reduce maple syrup by one quarter over medium-high heat. Add cream. When mixture reaches a simmer remove from heat
- In a separate bowl whisk together whole egg and egg yolks. Temper eggs by adding about a quarter cup of warm milk and whisking constantly. Slowly add the rest of the milk. Do not cook the eggs by heating them too quickly. Strain egg-milk liquid through a mesh sieve to remove any cooked egg bits
- Mix in vanilla, nutmeg and salt
- Pour spiced filling into the pie crust and bake until firm. The filling should jiggle slightly when moved. This should take about an hour
