Maple Spice Cream Pie

Ingredients:

¾ C maple syrup
2 ¼ C cream
1 egg
4 egg yolks
4-inches of scraped vanilla bean or 1 tsp ground vanilla
1 t nutmeg
¼ t salt
1 baked 9 inch pie crust

Directions:

  1. Preheat oven to 350°
  2. Reduce maple syrup by one quarter over medium-high heat. Add cream. When mixture reaches a simmer remove from heat
  3. In a separate bowl whisk together whole egg and egg yolks. Temper eggs by adding about a quarter cup of warm milk and whisking constantly. Slowly add the rest of the milk. Do not cook the eggs by heating them too quickly. Strain egg-milk liquid through a mesh sieve to remove any cooked egg bits
  4. Mix in vanilla, nutmeg and salt
  5. Pour spiced filling into the pie crust and bake until firm. The filling should jiggle slightly when moved. This should take about an hour
