Maple Sweet Potato Biscuits

Ingredients:

1 1/3 C flour
½ C cornmeal
1 T baking powder
¾ t salt
1 stick of butter, chilled and cut into small pieces
1 C mashed sweet potato, cooled
1/3 C maple syrup
½ C buttermilk

Directions:

  1. Preheat oven to 425?, line baking sheet will silicone baking mat or parchment paper
  2. Combine first 4 ingredients in food processor
  3. Add butter and pulse until mixture looks uniformly crumbly
  4. Add the last 3 ingredients and pulse to combine
  5. Form 16 even balls from dough
  6. Place on prepared baking sheet
  7. Bake 10-12 minutes or until toothpick comes out clean
