Ingredients:
1 1/3 C flour
½ C cornmeal
1 T baking powder
¾ t salt
1 stick of butter, chilled and cut into small pieces
1 C mashed sweet potato, cooled
1/3 C maple syrup
½ C buttermilk
Directions:
- Preheat oven to 425?, line baking sheet will silicone baking mat or parchment paper
- Combine first 4 ingredients in food processor
- Add butter and pulse until mixture looks uniformly crumbly
- Add the last 3 ingredients and pulse to combine
- Form 16 even balls from dough
- Place on prepared baking sheet
- Bake 10-12 minutes or until toothpick comes out clean
