Maple Syrup English Pudding

This is not a traditional American-style pudding. It is more similar to a dense cake

Ingredients:

2-inches of scraped vanilla bean or ½ tsp vanilla extract
1 egg
2 T butter
3T sugar or ground Demerara sugar
1 c flour
¼ t salt
2 t baking powder
? C milk
1 C Maple syrup

Directions:

  1. Preheat oven to 350°F. Butter an 8x8 baking dish
  2. In the bowl for your electric mixer combine vanilla, egg, butter and sugar. Beat until creamy
  3. In a separate bowl stir together flour, salt and baking powder
  4. Alternate adding flour, milk and syrup to the butter mixture. Mix enough to moisten, do not over mix
  5. Pour into baking dish. Bake until lightly brown, about 45 minutes.

Best served warm
