Mixed Green Salad with Maple Vinaigrette

Ingredients:

¼ C high quality extra-virgin olive oil
2 T rice vinegar
1 T maple syrup
½ t kosher salt
¼ t freshly ground black pepper
1 small shallot
15 oz mixed salad greens
1 C slivered almonds, toasted
½ C dried cherries, unsweetened
1/3 C feta, crumbled

Directions:
  1. Combine oil, vinegar, syrup, salt ,pepper and shallot with immersion blender
  2. Place greens in large bowl, top with nuts, fruit and cheese
  3. Serve with vinaigrette on the side
