Spiced Ginger Pancakes with Maple Pecan Syrup

Pancake Ingredients:

3 1/3 C flour
2 ¼ t baking soda
2 ¼ t baking powder
2 t cinnamon
1 ¼ t ginger
¾ t salt
¾ t cloves
1 ¼ C buttermilk
1 C club soda
6 T butter, melted
1/3 C brown sugar or Muscovado sugar
2 eggs

Syrup Ingredients:

2 C maple syrup
¾ C pecans, toasted and finely ground
½ c raw honey (raw wildflower honey or raw apple blossom honey)
½ t cinnamon

Directions:

  1. Combine all syrup ingredients in a medium saucepan, heat to a simmer over medium heat, reduce heat to low to keep warm. Stir occasionally
  2. Combine flour, baking soda, baking powder, cinnamon, ginger, salt and cloves in large mixing bowl
  3. In a separate bowl beat remaining ingredients together
  4. Slowly add dry ingredients to wet, stirring well
  5. Heat griddle pan and grease well
  6. Drop batter on hot pan by 1/3 C measures, flip once when done on bottom


Serve with warm syrup
