Ingredients:
2 C flour
½ t salt
2 t cinnamon
¼ t nutmeg
1 t baking soda
1 t baking powder
¾ C light brown sugar or Demerara sugar
½ C maple syrup
4 eggs
1 C apple sauce
3 C grated carrots
Directions:
- Preheat oven to 350°F
- Stir together flour, salt, cinnamon, nutmeg, baking powder, baking soda and sugar.
- In separate bowl beat syrup, eggs and apple sauce. Add to dry ingredients and stir until moistened. Fold in grated carrots
- Fill lined muffin cups 2/3 full
- Bake until a toothpick comes out clean, about 20 minutes. Remove from oven, wait 5 minutes before removing from pans to wire rack to finish cooling
