Ingredients:
2 T olive oil
1 small onion, chopped
1 garlic clove, diced
4 green onions, diced
1 ½ lbs sweet potatoes, peeled and cut into chunks
4 C vegetable stock
¼ t nutmeg
½ t cinnamon
1 C milk
½ C half-and-half
2 T maple syrup
Salt
Pepper
Directions:
- Add olive oil to large stock pot. Sauté onion over medium high heat for 5 minutes, add green onions and garlic and cook until onions are translucent
- Place potatoes, stock, cinnamon and nutmeg in pot and simmer uncovered for 20 minutes or until potatoes are tender
- Puree soup with immersion blender (or in small batches in a blender) until smooth.
- Stir in milk, half-and-half and syrup and reheat until warm. Season with salt and pepper, to taste
- Serve sprinkled with cinnamon
