Ingredients:
2 C fresh corn, cut off the cob
About 2 T flour
1 T melted butter
1 t
maple syrup, plus more for serving
½ t salt
2 eggs
Vegetable oil
Directions:
- Combine all ingredients, except vegetable oil, adding flour a little at a time, (amount will vary based on the liquid in the corn) dough should not be runny
- Heat ¼ inch of oil in large skillet
- Drop batter by generous spoonful into hot vegetable oil
- Fry four about 3 minutes per side, flatten after turning
Serve warm with more maple syrup
