Sweet Maple-Sage Pork Patties

Ingredients:

 8 oz bacon, chopped
1 lb pork shoulder, cut into 1 inch cubes
2 T maple syrup
¼ C water
1 ½ t black pepper
1 t salt
½ t sage
½ t nutmeg
½ t ground coriander
1-inch of scraped vanilla bean or ¼ t ground vanilla

Directions:

  1. Grind pork and bacon in food processor until coarsely chopped. You may need to do this in batches
  2. Place ground meat in large bowl and add remaining ingredients. Stir until well mixed
  3. Form 12 patties from sausage mixture (this can be done the day before serving)
  4. Heat large skillet over med-high heat. Cook patties 6 at a time for 5 minutes on each side, or until cooked through. Place cooked sausage on paper towels to drain
Serve warm
