Ingredients:
8 oz bacon, chopped
1 lb pork shoulder, cut into 1 inch cubes
2 T maple syrup
¼ C water
1 ½ t black pepper
1 t salt
½ t sage
½ t nutmeg
½ t ground coriander
1-inch of scraped vanilla bean or ¼ t ground vanilla
Directions:
- Grind pork and bacon in food processor until coarsely chopped. You may need to do this in batches
- Place ground meat in large bowl and add remaining ingredients. Stir until well mixed
- Form 12 patties from sausage mixture (this can be done the day before serving)
- Heat large skillet over med-high heat. Cook patties 6 at a time for 5 minutes on each side, or until cooked through. Place cooked sausage on paper towels to drain
Serve warm
