Sweet Potato Wedges with Maple Syrup and Spices

Ingredients:

3 medium sweet potatoes (about 1 lb each)
1 ½ T olive oil
1 ½ T maple syrup
¾ t cinnamon
¼ t ginger
1/8 t nutmeg

Directions:

  1. Preheat oven to 425°
  2. Slice each sweet potato (unpeeled) into 8 wedges
  3. Whisk together remaining ingredients in large bowl
  4. Add potato wedges and toss until coated
  5. Place wedges on oiled cookie sheet
  6. Bake for 15 minutes, flip and brush with any remaining sauce
  7. Bake until tender, about 20 minutes
