Ingredients:
3 medium sweet potatoes (about 1 lb each)
1 ½ T olive oil
1 ½ T maple syrup
¾ t cinnamon
¼ t ginger
1/8 t nutmeg
Directions:
- Preheat oven to 425°
- Slice each sweet potato (unpeeled) into 8 wedges
- Whisk together remaining ingredients in large bowl
- Add potato wedges and toss until coated
- Place wedges on oiled cookie sheet
- Bake for 15 minutes, flip and brush with any remaining sauce
- Bake until tender, about 20 minutes
