Vegan Roasted Almond Cookies

Ingredients:

1 C almonds, freshly toasted and cooled
1 C oat flour
½ C maple syrup
1 t almond extract

Directions:

  1. Preheat oven to 350°
  2. Grind almonds in a food processor
  3. Combine all ingredients in a medium mixing bowl and stir
  4. Divide dough into 6 portions, form a ball from each section and flatten to ¼ inch thick
  5. Transfer to oiled cookie sheet
  6. Bake for 12 minutes or until crisp with brown edges
