The chops are honestly the best I've ever had. Fatty, juicy. Exactly the way a pork chop would have been 200 years ago, which is the way they're supposed to be! Not the bland, dry meat that the giant commercial ag people sell us.
Mike & Valerie were also very accomodating of a few special requests. My wife wanted the back and leaf fat to make lard. We wound up getting the fat from multiple animals and it made a ton of BEAUTIFUL lard!
Secondly, we asked to keep the cheeks and they were able to provide those for us. Haven't tried them yet, but everything else is great so why wouldn't they be great too?
Finally. I'm from northeastern PA originally. And when they told me that I was within the window to have our meat processed by the amish butcher, I asked if he could make scrapple.
and he DID. It's impossible to get her and it's perfect! +++++
