Wenk's Yellow Hot Pepper

The Wenk's Yellow hot pepper is native to Albuquerque's South Valley, where is incorporated into the local cuisine. In terms of spice, this variety produces medium-to-hot peppers with a full, citrusy flavor. Because these waxy yellow fruits are very fleshy, they are often used for pickling.
